Meals and Recipes
As parents, we know it can be hard to think of something to cook, that the kids will also enjoy! We often find ourselves stuck in a rut, cooking the same things. We thought sharing some of our favourite meals and recipes would help us to find something new!
Pork and sage meatballs (Delia Smith)
Delicious enough for a dinner party, AND the kids love them! Much tastier than beef meatballs! I actually cook them in the oven for 20-30 mins on gas mark 5 (190) rather than shallow fry as its more convenient.
Spinach and ricotta cannelloni/ lasagne
Fairly simple and another favourite of mine and my kids! I make a simple white sauce (butter & flour then add milk) rather than creme fraiche. I’ve made it as cannelloni, but also as a lasagne when I’ve not got cannelloni tubes! I simply layer the three main parts separately. Very nice!
Very tasty recipe. If you use fresh chicken follow the recipe, except I use tomato pasatta instead of puree. I also and add loads of vegetables. I’ve made it with Quorn pieces or left over roast chicken, simply making the sauce. Delicious!
Simple carbonara with peas
This is a weekly staple in our house. Very quick to make and another favourite!
Toad in the hole
A variation on sausage and mash! I make mini portions in a muffin tin, baking the sausages cut in half in the trays while I make the batter. I then pour the batter over and bake until cooked.
Don’t like to think how many calories this has, but it’s very yummy! The kids like helping to make this, and it’s very easy! Go on, you know you want to!
A great Nigella recipe and definitely not one for the kids!!
Another great Nigella treat! A family favourite, it can be served at Christmas, in the summer with salad, or even Irish style with mashed potato and cabbage…yum!
A tasty family meal, vegetables can be chopped up smaller as a disguise for those fussy eaters!!
